Grape varieties cultivated for processing into wine, juice, and other products, selected for high juice yield (75–85% of berry mass), sugar accumulation, and manageable acidity. They are distinguished from table grapes (stolovye sorta) grown for fresh consumption and raisin varieties, and account for the majority of vineyard acreage worldwide. During Gorbachev's 1985 anti-alcohol campaign, Politburo member Vitaly Solomentsev argued that 92% of Soviet vineyards were technical varieties, making selective uprooting impractical; in practice, table grape vineyards suffered disproportionate destruction.
